Crocktoberfest: Pumpkin Bread in the Crockpot

I know there are thousands of pumpkin bread recipes out there, but for Crocktoberfest, I thought it would be fun to make it in the slow cooker. Baking this bread in a water bath makes it really moist.

Crockpot Pumpkin Bread

  • 1 15 oz can of pumpkin puree
  • 1/2 t. vanilla extract
  • 3/4 c. all purpose flour
  • 3/4 c. cake flour
  • 1/2 c. oil
  • 1/2 c. sugar
  • 1/2 c. brown sugar
  • 1 t. baking soda
  • 1 t. pumpkin pie spice
  • dash of salt

Crockpot Pumpkin Bread

In a medium-sized mixing bowl, blend the oil and the sugars. Add the egg, vanilla, and pumpkin, mix well. add flours, pumpkin pie spice, salt, and baking powder. Stir until well combined. Add 2 cups of water to your crock. Pour into a loaf pan that will fit inside your crockpot. I used two mini loaf pans. Place the pans in the crockpot. Put 5 or more paper towels under the lid to trap the steam and keep the bread from getting soggy. Turn your crock pot on high. Cook 2 hours if you are going to set a timer and forget about it. Cook 2 1/2 hours if you are going to remove the bread from the water bath as soon as time’s up.
